If I wanted my character to be a knight or a paladin, what kind of history would a knight/paladin normally have? If I wanted a dragonslayer, would he have to be a mercenary instead?

Maybe his hometown was destroyed by a dragon/dragons when he was still a little kid, including his family or something like that. He grew hatred and a deep grudge for those creatures. He swore to have revenge over that dragon, knowing they live for a very long time. Since there was nothing left for him there. He traveled to the castle and became a knight, but specially a dragon slayer, slaughtering every dragon he came across, while looking for the one that had destroyed his town.

Also for the paladin type character, have him (or her) as a squire to begin. Then when he finally attains kinghthood have some history with him being a faithful church goer. Paladins are normally knights whom have done valorous deeds or what not and been recruited by the church to become paladins. A good way for a knight to be recognized by a church etc. is for them to be in a crusade (as religion is a prominent factor of crusades) so something valorous would be more likely noticed by them as priests etc. would be amongst the battle lines.
